In the heart of Bas-Armagnac, 160 km south of Bordeaux, is our Domaine de Saoubis in the department of Gers. The peculiarity of this region is that villages often sit on the hills with their white stone houses, mainly from the Middle Ages. This region is also called "Black Armagnac", with its large forests of oaks and pines and between vineyards and sunflower fields.
For the production of our grape juice or wines for Armagnac we only take the juice of gout and the first press juice. Immediately after the fermentation (without adding sulphite on all our products), so in late October, early November begins distillation at the estate, with an Armagnac still working still in a wood fire.
Part of this eau-de-vie is immediately housed in stainless steel vats to obtain Armagnac white. Most of it will be destined for Armagnac and will be put in new parts, 400-liter casks made from local oak and also wood from the estate.
